1 tbsp Extra Virgin Olive Oil
1 lb. Thin Sliced Beef Round for Stir Frying

1/2 tsp Cumin, ground
3/4 tsp Meat Tenderizer (No MSG)
1/8 tsp Chipotle Powder
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/4 tsp Coriander
1/4 tsp Smoked Paprika (Spanish)

1/4 cup Red Wine
1 cube Beef Bouillon
1 tbsp Tomato Paste

3 tbsp Extra Virgin Olive Oil
3 Bell Peppers, de-seeded and thinly sliced
2 small Onions, thinly sliced


Flour Tortillas, Fajita Size
8 oz Pkge Mexican Four Cheese Blend
2 Avocados, sliced
1 cup Roasted Tomatillo Salsa Verde
1/3 cup Cilantro, chopped
2 Limes, sliced


• In large sauté pan over medium, heat Olive Oil.

• Add Sliced Beef Round and all Spices. Sauté for 5 minutes, turning frequently.

• Add Red Wine, Beef Bouillon and Tomato Paste. Continue cooking and stirring for another 5 minutes or until meat is cooked. Remove from heat and cover until ready to serve.

• Meanwhile, in a large sauté pan, heat 3 tbsp Extra Virgin Olive Oil over medium low heat.

• Add Peppers and Onions. Sauté 15 to 20 minutes or until desired tenderness. Remove from heat.

• Prepare the Fajita Bar then transfer Fajita Beef and Peppers and Onions to the table and serve.
