4 Russett Potatoes, peeled, cut and cubed
2 Medium Yams or Sweet Potatoes, peeled, cut and cubed
3 Onions, cut and quartered
5 cloves Garlic, sliced
4 springs fresh Thyme, leaves removed
1/2 cup of Olive Oil
1 pkge Onion Soup Mix


• Preheat oven to 400˚F.

• Place cut Potatoes, Yams, Onions, Garlic, Olive Oil, Thyme leaves and Onion Soup Mix in large re-sealable plastic bag. 

• Close bag and shake until all of the ingredients are coated.

• Pour into a 13 x 9 glass baking pan, spreading mixture evenly across.

• Place in oven for 50 minutes or until potatoes are golden brown and can be easily pierced with a fork. Toss potatoes half way through cooking.

• Serve hot.
