1 1/2 lb. (8 - 10) Tomatillos, de-husked, washed and cored
2 small Onions, quartered
2 cloves Garlic, roughly chopped
1/2 cup Cilantro, roughly chopped
Juice of a 1/2 Lime
2 tsp Honey
1 Jalapeno, de-seeded and halved
1/4 tsp Salt
1/8 tsp Black Pepper, freshly cracked


• Preheat broiler.

• Place quartered Onions and Tomatillos onto a tin foil lined baking sheet. Broil on top shelf for 15 minutes, turning frequently to evenly char. (The charred black skin adds to the smoky flavor)

• After 15 minutes, add Jalapeno. Cook for an additional 5 minutes. When done, remove from heat and place in blender.

• Add Garlic, Cilantro, Lime Juice, Honey Jalapeno, Salt and Pepper. Blend until pureed about 30 seconds.

• Pour into a bowl, place in refrigerator and serve when ready.
